Comparative Phenolic Profiles of Monovarietal Wines from Different Croatian Regions

The phenolic profile of wines is often used to evaluate their quality and authenticity. composition twenty-five commercial produced in different Croatian regions from eight red nine white grape varieties was studied. A total twenty-four polyphenols were analyzed using HPLC-DAD classified into five groups based on structure: acids, flavan-3-ols, anthocyanins, flavonoids, stilbenes. contained higher concentrations constituents than the wines, which gallic acid (11.8–90.3 mg/L), procyanidin B1 (13.7–63.8 catechin (10.5–34.5 mg/L) most abundant. In contrast great variability observed with autochthonous Plavac Mali Babić showing specific profiles. representative components studied showed strong antioxidant activity. Gallic proved be effective DPPH (IC50 = 0.33 µg/mL) NO scavenger 12.36 µg/mL), while myricetin potent inhibitor lipid peroxidation 1.68 µg/mL). Our research has contributed characterization varietal differentiation highlighting those rich certain as potential nutraceuticals.
